Coconut Granola

Our Home Meal Delivery Service and Executive Lunch Service here in Panama City allows us to cook 10 new unique dishes weekly and we love what we do! I mean we really do.... So for us cooking doesn't feel like a chore. For many of you, we know it is! So we want to feature of one our recipes, simplified for you, the at home cook. 

Coconut Granola
2 cups old-fashioned oats
3/4 cup shredded sweetened coconut
1/2 cup chopped almonds
1/3 cup pepitas
2 tablespoons brown sugar
1 teaspoon cinnamon
1/4 teaspoon salt
4 tablespoons coconut oil, melted
1/2 cup pure maple syrup
1 teaspoon vanilla extract
1/4 teaspoon coconut extract

1. Preheat the oven to 300 degrees F. Line a large baking sheet with a Slipat or parchment paper. Set aside.

2. In a large bowl, combine oats, coconut, almonds, pepitas, brown sugar, cinnamon, and salt. In a small bowl, whisk together coconut oil, maple syrup, vanilla, and coconut extract. Pour liquid mixture over dry ingredients. Stir until dry ingredients are well-coated.

3. Pour the granola mixture onto the prepared baking sheet. Spread granola into an even layer. Bake for 30 minutes or until granola is golden brown, stirring every 10 minutes. Let granola cool completely. Store in an air-tight container for up to 1 month.

Green Thai Curried Eggplant

So for us cooking doesn't feel like a chore. For many of you, we know it is! So we want to feature of one our recipes, simplified for you, the at home cook. 

Green Thai Curried Eggplant
  • Vegetable oil
  • 2 eggplants, cut into bite-sized pieces
  • 1 red bell pepper, seeded, sliced into sticks
  • 1 can of bamboo shoots
  • 2 1/2 tablespoons green curry paste
  • 1 can coconut milk
  • 1 lemongrass stalk, cut into three pieces and bruised
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1/4 cup Thai Basil or Sweet Basil leaves
  • 1-3 Thai chilies, depending on your heat preference
  • Lime for garnish (optional)
1 Place a tablespoon of vegetable oil in a wok or deep pan over high heat. Add eggplant and stir-fry until skin becomes lightly brown and blistered, and the eggplant insides begin to soften and get a slight sear, about 3 to 4 minutes. The eggplant will absorb the oil, if some of the eggplant pieces don't get any add a little more oil. Remove from heat and set aside in a bowl.

2 Place another tablespoon of vegetable oil in the wok heat over medium heat. Add the curry paste - be careful, as it will cause the oil to spit - and sauté over medium heat until fragrant, about 20 to 30 seconds. Add half of the coconut milk and mix, simmer for 2 to 3 minutes.

3 Add the lemongrass, soy sauce, brown sugar, and remaining coconut milk and bring to a boil. Add the bamboo shoots, cooked eggplant, and bell pepper. Cook for 4 to 5 minutes until softened a bit. Stir in basil and chilies and remove from heat. Serve over rice with lime wedges on the side.

Recipe of the week: Pasta with Lemon, Basil and Olive Pesto

Pasta with Lemon, Basil and Olive Pesto
  • 8 oz Penne Pasta
  • 2 cups packed fresh sweet Italian Basil, picked and washed
  • 6 large cloves of garlic
  • 4 tablespoon Parmesan
  • 8 oz pitted green olives
  • 1 tablespoon lemon zest
  • 1 teaspoon lemon juice
  • freshly ground black pepper
  • sea salt to taste
  • 1/4 cup extra virgin olive oil, plus additional for pasta
  1. Bring heavily salted water to a boil and cook pasta until aldente. Drain pasta and toss in a small amount of olive oil.
  2. In a food processor combine basil, garlic, olives, Parmesan, 1/4 cup olive oil and lemon juice. Pulse until the mixture forms a homogenous smooth paste.  Add salt to taste
  3. Coat pasta generously with pesto mixture and finish with cracked black pepper and lemon zest.

Zucchini Basil Soup
  • 1 tablespoon olive oil 
  • 1 large yellow onion, chopped
  • 3 cloves of garlic, minced
  • 2 pounds zucchini, sliced 1/4 inch thick 
  • 4 cups vegetable broth
  • 1 cup loosely packed basil leaves, washed and stemmed
  • 2 tablespoons sour cream
  • 1/4 teaspoon chili powder,
  • Kosher Salt & Ground Black Pepper
  1. Heat olive oil in a large saucepan over medium heat. Add onion and cook until translucent, about 5 minutes. Add zucchini and cook another 2 minutes; then add chicken broth and  basil leaves. Reduce heat to a simmer and cook 20 minutes or until zucchini is soft.
  2. Purée the soup in batches in a blender. Be sure to puree until it has a smooth, creamy consistency. Add sour cream and chili powder. Season with salt to taste.

Recipe of the week: Vegan Mushroom Curry

Vegan Mushroom Curry
  • 1 tbsp oil
  • 1 onion, roughly chopped
  • 1 large potato, chopped into small chunks
  • 1 zucchini, trimmed and chopped into chunks
  • 1 cup button mushrooms
  • 2-4 tbsp curry paste (depending on how hot you like it)
  • 1/2 cup vegetable stock
  • 1 can coconut milk
  • Salt
  1. Heat the oil in a large saucepan, add the onion and potato. Cover, then cook over a low heat for 5 minutes until the potatoes start to soften. Throw in the zucchini and mushrooms, then cook for a few more minutes.
  2. Stir in the curry paste, pour over the stock and coconut milk. Bring to the boil, then simmer for 10 minutess or until the potato is tender. Season to taste with salt.
This curry is an easy 20 minute, one pot dinner. You can change it up by adding garam masla, different kinds of curry pastes or dried curry mixes.

Recipe of the Week: Wine Braised Chicken

Wine-Braised Chicken or Coq a Vin
  • 3 fresh thyme sprigs
  • 5 flat-leaf parsley sprigs
  • 1 bay leaf
  • 3 slices bacon, cut into pieces
  • 4 bone-in, skinless chicken thighs
  • coarse salt and ground pepper
  • 1 large onion, chopped
  • 2 medium carrots, sliced crosswise on the diagonal into 1/2-inch pieces
  • 2 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups dry red wine, such as a Pinot Noir or French Burgundy
  • 2 cups chicken broth
  1. Warm a pan over medium-high heat with oil. Season chicken generously with salt and pepper. Working in batches to avoid crowding, brown chicken about 4 minutes per side. Transfer to a plate; set aside.
  2. Heat large thick bottomed pot over medium-low. Add bacon; cook until browned, about 10 minutes. Add onion, carrots, and garlic to pot. Cook until onion softens, about 4 minutes. Stir in tomato paste and flour; cook 1 minute.
  3. Add wine, broth, chicken, and herbs. Bring to a boil; cover, and reduce to a simmer. Cook 10 minutes; uncover, and simmer until chicken is cooked through, about 15 minutes. Remove and discard herbs.
